In 1960 Edwin (Eddie “Red Rum”) Ellis and his wife Lillian, made the move from the West Indies to London, England in search of a better life. To support her family, Lillian found employment at a top London hotel. It was while working there that she discovered the sweet flavours of British jams and on special occasions, she would bring home the small jars that accompanied high tea at the hotel.
Eddie loved these new flavours and would add the jams to his plate of traditional West Indian food, which among other things, was covered in chilli’s.
It was during these meals that the idea for Eddie’s Chilli Jam was born.
